Vegan Chocolate “hiding veggie” muffins – originally published JUNE 22, 2011

1 large zucchini shredded
1 small carrot shredded
1 can pumpkin
1 cup cranberries
1 cup crushed nuts of choice
5 tbsp black strap molasses
1 cup uncooked rolled oats or 1 cup cooked steel cut oats
1 package devils food cake mix
2c chocolate chips(optional)

Preheat oven to 350F.
Mix all ingredients together.
pour in greased muffin tins.
bake for 12 minutes.

let cool and enjoy
